Home made pickle of carrot and cauliflower- ghar ka bana gajar- gobhi ka achar

Gajar gobhi ka aachar

Ingredients:

1gobhi (cauliflower)ka fool

1kg gajar(carrot)

50gm lahsun(garlic) paste

50gm adrak(ginger) paste

50 gm rai(mustard seed) ki daal

25gm saunf(fennel)

15gm maithi (fenugreek)daana

1tb SP haldi(turmeric powder)

2tb SP laal mirch(red chilli) powder

 100gm namak(salt)

1tsp Hing (asafoetida) powder

200ml Sarson ka tel (mustard oil)

50ml sirka(vinegar)

Method:

Sabse pahle gajar gobhi ko Kat le chote chote tukdo me aur saaf pani me dho le.ek bade bartan me 4lt pani ubal le aur ublte hue pani me gajar gobhi ko 10min ke liye paka le.fir pani me se Chan kar kapde par faila kar 4-5hr achchi tarah sukha le.

Saunf aur maithi ko sukha thoda bhoon le aur fir rai ke sath mila kar barik pees le.

Ab ek kadhai me 50ml tel garam kare ab usme hing dale aur fir adrak lahsun ka paste dalkar bhoon le aur gas band kar de thoda thanda karke usme sare masale aur namak dal kar achchi tarah mila le….ab isme sukhai hui gajar gobhi mila de.dhyaan rahe gajar gobhi me pani ka ansh matra bhi na ho nahi to achaar kharab ho jayega.

Ab ek bartan me sirka garam karke usme gud mila le aur pighla kar thanda kar le, fir isko achar me achchi tarah mila le.ab is achar ko ek saaf aur sukhi  kaanch ki barni me bhar kar tight dhakkan band karke  ek din ke liye dhoop me rakh de.baki bache hue tel ko doosre din garam karke thanda kar le aur achaar me achchi tarah mila de..yah achaar kuch hi din me khane ke liye taiyaar ho jayega.
